I love making pasta because of the instant gratification (yum: dinner!). It’s also easy to make simple changes to ensure homemade pasta has more protein and is healthier than store-bought pasta. That really appeals to me, and the kids don’t notice when I add an ancient grain or sneak in an extra half of an egg. When the pasta is fresh, the sauce can be lighter and more veggie filled, too. It’s a win/win.
